Healthy Recipes

Tuna Pasta Salad - From the Mayo Clinic website
2 cups uncooked bowtie pasta
2 cans (6 oz. each) white tuna, packed in water, drained
1/4 cup finely chopped onions
2/3 cup frozen peas, thawed
2/3 cup reduced fat salad dressing
4 cups fresh spinach
1/8 tsp. black pepper, if desired

Cook pasta and drain. Then rinse pasta under cold water.
In a large bowl, combine the cooked pasta, tuna, onions, peas, salad dressing and pepper. Toss to mix well, then cover and refrigerate for at least 2 hours.
To serve, place 1 cup of spinach on a plate and top with 1/4 of the tuna salad.
